A Sweat or Hot Italian Sausage recipe
1 pound ground pork
1 tablespoon red wine vinegar
1 tablespoon Italian seasoning
1 teaspoon salt
1 teaspoon freshly cracked black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon crushed red pepper flakes, or to taste
1/4 teaspoon crushed/ground fennel seed
(OPTIONAL FOR HOT) 1/2 teaspoon ground cayenne pepper, or more to taste
Mix everything together and knead until flecks of spice are evenly distributed through the sausage.
Refrigerate for at least 12 hours before cooking.
